Amaitii, is inspired from the Tamil word for "calm", a reflection of the slow, intentional journey we take from the cacao grove to your first bite.
We don’t just make chocolate, we curate a sensory experience
that honours the earth, the farmer, and the incredible flavours of cacao.
Our story begins in the lush, quiet landscapes of rural South India. Cacao growing regions of West Godavari, Idukki, and Annamalai among others are at the forefront of the cacao revolution in India. Working directly with local farmers, we ensure single-origin integrity in all our batches.
Our partner farmers observe rigorous post harvest practices of fermentation and drying to ensure the beans develop the desired flavour and colour profiles that we can use in Amaitii chocolates.
Fine flavour cocoa beans from farms reach our production facility in Mumbai. Here, we carefully store, roast and stone grind the beans in small batches to prepare the base for bean-to-bar creations.
Now, here is what's special about the bean to bar process - minor variations in temperature, humidity and roast profiles can lend a unique taste to each batch of chocolate we produce. No two batches of chocolate will ever be exactly the same. This is not a defect, this is what separates our bean to bar chocolates from industrial chocolates.
After 2-3 days of continuous refining and conching, chocolate couverture is ready to be tempered and moulded into lip-smacking creations.
We produce a wide variety of couvertures in our small production facility - from dark, dark-milk to white chocolate varieties. Be it cardamom or cinnamon infused recipes, inclusions of various exotic ingredients like coconut, mango or raisins - we do it all in our recipe lab.
Recipes that pass our rigorous flavour and mouthfeel tests are then produced in small batches so you can enjoy them!
